Tapas are the snacks of the cocktail hour


The word tapas comes from the the Spanish word tapar meaning “to cover.” While it’s not completely clear where the tradition of tapas started, there are several explanations. My favorite is that the original tapas were pieces of bread or meat that were placed over the top of the beverage to keep the fruit flies out. Anoth says that because tapas are usually eaten while standing and milling around for conversation, the small plates are often put on top of the glass you’re carrying.

Whatever the origin of the word, tapas are small plates full of flavor. Traditional tapas include olives, which are often filled, meatballs, alioli, a wide variety of marinated and cooked meats and a wide array of fried foods, especially potatoes.
