INGREDIENTS
1 pkg soft tortilla shells
1 container hummus
1 medium size beet
2 carrots
1 green onion
1 lemon
1 cup feta cheese
ground cumin
olive oil
METHOD
Use a box grater to grate 2 medium peeled carrots into a mixing bowl and then grate an equal amount of peeled raw beet* into the bowl as well.
Next, add a squeeze of lemon juice to the bowl, one chopped green onion and then add a drizzle of olive oil and mix it up. For optional but really nice depth of flavor, add a sprinkling of ground cumin to the mix as well.
Make 1 wrap at a time and start by adding about 1/2 cup hummus to the center bottom third of the tortilla shell and then add a generous amount of the beet and carrot salad, add some crumbled feta cheese and carefully roll it up -- just like a burrito -- folding the sides in as you go.
*Be careful handling and grating the beets because the beet juice could stain your clothing.
